Dr. Cecilia Eugenia Martinez-Sanchez is Professor-Researcher at the Department of Chemical Engineering and Biochemistry of the National Technological Institute of Mexico campus Tuxtepec. She obtained a bachelor�s degree in chemical pharmacy Biologist from the Universidad Veracruzana in Mexico and a master�s degree in food sciences from the Technological Institute of Veracruz, Mexico. She obtained her Ph.D. in Food Sciences at the UNIDA-Technological Institute of Veracruz. She has participated in more than 30 funded research projects since 2000, in which she has been the owner and responsible for them. She has collaborated in other additional research projects. She has directed 32 undergraduate theses, 22 master's theses and co-directed 3 doctoral theses. She has 53 current publications in JCR indexed journals. She has served as Co-ambassador of Mexico to the non-profit organization Global Harmonization Initiative since 2019.She belongs to the National System of Researchers of Mexico since 2002, currently with recognition level I in the period 2021-2025. Dr. Martinez teaches in the career of Biochemical Engineering and the master�s in food science at Technological. She serves on the editorial board of two international journals. Her areas of interest include edible oils and fats, structured lipids, bioactive compounds, nutraceuticals and functional foods, antioxidants, and phenolic compounds.
